  49. 2020: Thanks to the Wuhan Flu leaving China and enveloping the world, the number of confirmed global cases sits at 718,685 what with 33,881 confirmed deaths from the virus.  Meanwhile, in the United States, we know of 139,675 cases with at least 2,436 deaths.  China continues trying to alleviate itself of the sole responsibility as creators of this horrendous virus but everyone knows the communists sitting pretty in Beijing are the culprits and that when the crisis passes, they will be held to account for it.  Shame on them: your plan to take out President Trump by ruining the global economy is a complete failure.

Politicians, like chefs, must either do it right or pay the price…

San Diego, CA 92122, 11-28-2019 Thursday:  Good morning!  ¡Buenas mañanas!  Welcome to the 2019 Thanksgiving Day celebration here at the blog.  It is always a pleasure to come in and do a holiday here, no matter what it is.  We take considerable pride in our self-appointed work and we hope that one day, we will become the big boys (and girls) on the block, you know, los grandes (y niñas) en el bloque, what with a big professional website and additional writers and news writers.  Everyone must begin somewhere and since we are in the midst of our ten-year celebration, it could be coming soon.

You know, life is akin to making top-notch turkey gravy, you either do it the ‘right way’ or you don’t.  To make the best gravy- and note- meat and/or poultry-based, roux-formed ‘sauces’ are NOT ‘sauces’ in the classical sense but are true gravies and more American culinary art than they are European or elsewhere.

We roast our turkeys a day or two before the holiday, which might seem strange to folks at home who generally attempt to do everything the same day, possibly beginning the night before.  Some things, mis amigos, you simply cannot rush, like say, impeaching a president?

We slather the turkeys inside and out with vegetable oil and stuff raw butter underneath the breast skin.  We also add our salt, pepper, and plenty of garlic.  Garlic is a must and anyone saying otherwise has no clue as to what they are talking about so pay no attention to their mutterings.

We add plenty of celery ends, tops, and leaves, onion and carrot scraps, some leeks, scallions, even some turnips and parsnips, to the cavities of the birds along with some orange peelings and lemon peelings.  We add whole thyme, some marjoram, and plenty of parsley, all the aromatics that will give the meat an aroma worthy of dying for as well as a tenderness possible only with the intercession of God cooked right into the meat.

We start the temperature high and then drop them down and once they begin to brown, we tent them with foil so as to prevent any overcooking or over-roasting of the wings and thighs.  As they cook, we ladle drippings back onto the meat and back into the cavities and once the ultimate internal temperatures hit 165° F., we remove them from the oven and begin cutting the meat away from the bones.

We do not wait until the birds are cool as some do, we take our time, using a poultry boning knife and scimitar to make clean cuts and to then lift the breast meat away from the carcass.  Then, we spend time on the thighs so we can remove as much of the dark meat as possible and set it aside, too.

Then, the bones go into the steam-jacket along with the liquid part of the drippings.  As some are working on the meat, others are drawing the fat off the surface of the accumulated turkey stock.  We skim off this liquid fat and keep it separate from the stock.  When we have accomplished this task, we add the stock to the steam-jacket along with more of the root vegetables, seasonings, spices, and additional water and for good measure, some port wine along with more garlic heads.

We slowly and patiently reduce the stock for a couple of days, concentrating the flavor.  Then, when it’s time to prepare the gravy, we bring out the solidified fat, put it into a heavy-bottomed, roasting saucepot, commonly known as a ‘G.I. pot,’ and heat it up.

As it does so, we begin adding all-purpose flour to form a roux.  The kind we want is a medium-brown roux.  We whisk it continually while adding enough flour until it is very thick and then we put the roux pot into a 350° F. oven where we continue cooking it until we arrive at the color we desire, after 30-40 minutes.  Stir frequently.

Then, it’s a matter of returning the hot stock to the roux, gradually, slowly, whisking all the while.  We do this so we do not create any lumps of flour or spice which would be devastating for the finished product.  It is all about time, minute by minute, hour by hour, whisking, stirring, and adding.  Then, by the time it is formed, we adjust the flavorings and return it to a cleansed steam-jacket for additional slow cooking until the saucier declares it ‘acabada, perfecta.’

Now, we could half-ass the gravy like what the Democrats are trying to do to President Trump with their fraudulent impeachment.

Let’s say they are akin to a traitorous employee who has worked in our family’s restaurant and then decides that he or she is going to desert to the enemy and make ‘our gravy’ at ‘their place.’  Only, they don’t know the entire recipe or the full spectrum of ingredients because a chef NEVER exposes his or her complete recipes.

Let us say this traitorous former employee is Adam Schiff, (D-CA).  Let’s say he has convinced his new boss, Nancy Pelosi, that he can make better gravy at her place than we can do at ours.  Let’s say they bank on making loads of money and spend a lot of time going on various television programs telling everyone, “WE GOT THE GOODS!  WE ARE GOING TO PUT ON A BETTER THANKSGIVING DINNER THAN THE MUÑOZ DINER” (NOT the real name of our place for security reasons).

They invite everyone in the community.  They invite the bigwigs and they call in chefs from other places to witness their coup d’ grace. Everyone is excited, the big day is here, Chef Schiff puts out the holiday dinner course by course, crowing over each dish until we arrive at the BIG ONE, the main entrée, with the roasted turkey, mashed potatoes, sage and onion stuffing, the works.  Covering the meat and potatoes, he ladles out his ‘masterpiece,’ the famed turkey gravy he stole from us.

Well, he screwed it up and you can see the distaste on the faces of the assembled diners.  Some are pushing their plates away, so nasty is the meal.  They were all led to believe that this would be the dinner that would put the Pelosi restaurant on the map and would give them five Michelin stars, thus propelling Chef Schiff into the ozone layer for decades to come.

Only, it is a disaster and everything goes to hell.  Chef Schiff decides he can no longer live being the absolute catastrophe that he is.  He goes into the crapper of a cheap hotel, puts his knotted tie around his chicken-neck, and hangs himself.  Meanwhile, owner Pelosi blasts him to the press, saying, “He forced me to do this but I never wanted to so I am washing my hands and stepping away.”

The assistant cooks and the prep-master and all the rest of the kitchen denizens who climbed aboard the Schiff culinary train find they can no longer obtain jobs outside working at an IHOP, Sizzler, or a Denny’s[i], because they are known scumbags and will have to find something else to do like cleaning the crappers in high schools.

Amigos, it is important to be honorable and to do the right thing.  When one thinks they know it all and can make a fast buck off it, usually, it does not go the way they believed it would.

Friends, amigos, have a wonderful Thanksgiving holiday and we will pick back up tomorrow.  Please, spend time on making your gravy as it is the crowning adornment to any turkey dinner.  Always has been ever since the Native Americans taught the Pilgrims how to do it and the Pilgrims passed it on to the rest of us.

What happened to Jamal Khashoggi was horrible but should it derail all the great things that have taken place across the Middle East since Donald Trump entered the White House?

San Diego, CA, 12-07-2018 Friday: We here at this blog have evaded the story about slain journalist for the Washington Post, Jamal Khashoggi, the man who walked willingly into the Saudi consulate in Turkey in November and who apparently exited as individual body parts carried out by the hitmen who murdered him.  This story has been ongoing nowhere near as long as the Trump-Russian collusion tale but man, the media and enemies of the president (and even some friends) just do not want to let go of it- they are like a dog trying to get the last little bit of gristle off the bone.

I understand WHY everyone is upset about the story but it also is puzzling how the Turks claim to have ‘discovered’ a sound recording of the execution of the Saudi journalist.  How did they obtain this mystifying tape from the sanctity of a consulate?  Did the Turks or the CIA have spies lurking within the building or did we fortuitously plant listening devices?  Something is not right here and yet, the tape purports to contain the final minutes of the victim’s life.

What many of the stories about Mr. Khashoggi leave out is that besides being an outspoken critic of the Saudi government and the House of Saud, he also was a member of the Muslim Brotherhood, an entity inimical to the royal family, a malevolent entity that seeks to go even more conservative than the already ultra-conservative ruling house meaning it wants to return to the time of Mohammed and live under his ‘guiding light’ of violence, brutality, and bloodshed.

Although the Saudis have long been a sweet-and-sour friend, (we must remember of course that nearly all of the 9-11 hijackers hailed from Saudi Arabia), they have also been an indispensable ally and with the rise of Iran in the vacuum left by the toppling of Saddam Hussein, they have also drawn closer to their once-mortal enemy, Israel, forming an alliance with the Jewish state as well as its neighboring Arab states (excluding the Palestinians).

Mr. Khashoggi was a lifelong critic of the House of Saud and also of its new heir apparent, Crown Prince Mohammed bin Salman (aka MBS), a man who seeks to modernize the heretofore archaic Saudi nation, something that would- if it were to succeed- would bring about drastic change for the good across the entire region.

For far too long, my colleagues and I have authored stories in which, we said the only thing preventing the religion of Islam from joining its fellow religions in the 21st century is that they have failed to undergo a reformation of sorts in the way that Christianity did which would bring them into modernity.

Imagine, if the House of Saud through the arrival of MBS, could usher in a new age for Islam, one in which, the faith could throw off the shackles of its past and embrace its future as an equal nation among nations.

Moreover, they are attempting to do this under the tutelage of MBS through granting women more rights, possibly opening the door to other faiths having a presence within the Kingdom and modernizing its legal system so that to run afoul of the law does not necessarily mean a date with the headsman in the town square on Friday.

What happened to Mr. Khashoggi has thrown the world into a tailspin with Western nations attempting to keep the crown prince at arm’s length.  Only Russian despot, Vladimir Putin, gave MBS a ‘high-five’ when the two ran into each other at the recent G20 meeting down in Buenos Aires, Argentina.

There is incredible pressure upon President Trump to sever ties with the Kingdom until it removes MBS from his position as next-in-line and to end the war in neighboring Yemen in which, the Saudis wage havoc with the Iranian proxies, the Houthi rebels.

Apparently, things are out of control in Yemen, there is widespread famine, children are dying in the streets, medical supplies and fresh water are running out while the Saudis launch missiles against enemy military and political sites.

This is not the first time war has raged in Yemen, it did more than 50 years ago when Saudi Arabia (aided by Jordan and Great Britain) fought a war there when Yemen was composed of two parts, North Yemen (Yemen Arab Republic) and the People’s Democratic Republic of (South) Yemen.

Officially known as the North Yemen Civil War (1962-1970), it pitted royalists against the Soviet-backed communists of PDR of Yemen and its Egyptian allies.  It was horrible, it was bloody, and it was yet another proxy war fought between West and East and the carnage was just as horrendous as now- if not worse- and yet, the public outcry at the time was nothing like it is now.

The Saudis have every right to defend their territory from attacks by Iranian proxies.  This is a battle for the soul of the Middle East.  Mohammed bin Salman seeks to usher in a new era of peace, tranquility, and modernization which to me means we should not cut our number two Middle Eastern ally off from our military aid.

The left in the United States would love it if we would cut the Saudis loose because anything that harms the country has the power to harm Donald Trump.  The American left could give a damn if the entire Middle East descended into chaos, bloodshed, and flames just so long as it would allow them to pummel President Trump over the head.

I do not believe the left gives a damn about a single Yemeni lost in this struggle between U.S.-supported Saudi Arabia and Iran-Russia-and-Hezbollah-backed Houthi rebels.  Let us root for a Saudi victory and let us not let the death of one journalist, diametrically opposed to the new leadership in his homeland to dislocate all the good things we have accomplished in the region since Donald Trump has been in the White House.

Jamal Khashoggi probably should not have been murdered but he was and it sure seems as though we or the Turks were on the lookout for it and so tapes of the poor man’s death found their way into the press.  Deep State, anyone?

  5. 1836: The nation elected Martin van Buren the eighth president of the United States.
  6. 1842: The New York Philharmonic performed its first concert.
  7. 1907: At London’s National Sporting Club, Eugene Corri became the first referee to officiate from within the boxing ring. Up until this point, referees had always done it from outside the ring.  
  8. 1909: Chemist Leo H. Bakelite received a U.S. patent for Bakelite, the first synthetic plastic.
  9. 1911: China abolished the law that men wear their hair in a queue or ponytail.
  10. 1917: The U.S. becomes 13th country to declare war on Austro-Hungarian Empire during World War I.
  11. 1925: Swimmer Johnny Weissmuller set a world record in the 150-yard freestyle with a time of 1 minute, 25 and 2/5 seconds. He went on to play “Tarzan” in several movies.
  12. 1926: The Electrolux Servel Corporation patented the gas operated refrigerator on this date.
  13. 1935: In the 23rd Canadian Football League Grey Cup, the Winnipeg Blue Bombers beat the Hamilton Tiger-Cats, 18-12.
  14. 1941: Japan launched a surprise attack on the U.S. Pacific Fleet at Pearl Harbor, Hawaii, as part of a plan to conquer Southeast Asian territories; the raid, which claimed some 2,400 American lives, prompted the United States to declare war against Japan the next day. Prior to the attack, a U.S. destroyer, USS Ward, sunk the first Japanese submarine of the war outside the harbor.  In North African Theater, the German siege of Tobruk ended after eight months.
  15. 1945: The U.S. government issues a patent for the microwave oven.
  16. 1946: Fire broke out at the Winecoff Hotel in Atlanta; the blaze killed 119 people, including hotel founder Frank Winecoff.
  17. 1947: Future longtime bassist with the Canadian rock band, Loverboy- Ken “Spider” Sinnaeve- was born in Regina, Saskatchewan, Canada, on this date.
  18. 1949: Chang Kai-shek flees Chinese mainland to the island of Formosa to set up Nationalist Chinese
  19. 1960: The African nation of Ivory Coast claims its independence from France.
  20. 1963: During the Army-Navy game, videotaped instant replay was used for the first time in a live sport telecast as CBS re-showed a one-yard touchdown run by Army quarterback Rollie Stichweh; however, Navy beat Army 21-15.  
  21. 1971: Libya announced the nationalization of British Petroleum’s assets.
  22. 1972: Apollo 17 blasted off from Cape Canaveral, America’s last moon mission to date. Elsewhere, an assailant shot and seriously wounded Philippines First Lady Imelda Marcos; her bodyguards shot and killed the would-be assassin moments later.  
  23. 1975: The Indonesian army occupies the island of East Timor.
  24. 1981: Spain becomes a member of the NATO
  25. 1982: Convicted murderer Charlie Brooks Jr. became the first U.S. prisoner to undergo execution by lethal injection, at a prison in Huntsville, Texas.
  26. 1986: Nita Strauss of Alice Cooper’s band (guitars/vocals 2014-present), was born on this date.
  27. 1987: A gunman aboard a Pacific Southwest Airlines jetliner in California apparently opened fire on a fellow passenger, the pilots and himself, causing the plane to crash with the loss of all 43 people aboard the plane. Elsewhere, Soviet leader Mikhail S. Gorbachev set foot on American soil for the first time, arriving for a Washington summit with President Ronald Reagan.
  28. 1988: A major earthquake in the Soviet Union devastated northern Armenia; official estimates put the death toll at 25,000. Meanwhile, upon arrival at Wall Street, cheering crowds cheer for Soviet leader Mikhail S. Gorbachev on a state visit to the United States.
  29. 1990: The Iraqi Parliament endorses President Saddam Hussein’s decision to free Western hostages.
  30. 1993: Gunman Colin Ferguson opened fire on a Long Island Rail Road commuter train, killing six people and wounding 19. Following his trial, the jury sentenced him to a minimum term of 200 years in prison. 
  31. 2009: The United Nations opens its Climate Change Conference in Copenhagen, Denmark.
  32. 2011: Former Illinois Democrat Governor Rod Blagojevich receives 14-year prison term for corruption. Meanwhile, at Pearl Harbor, the United States commemorates the 70th anniversary of the Japanese attack on the naval and air bases located there.
  33. 2012: NASA’s Twin GRAIL probes studying the surface of the moon reveal unexpectedly deep cracks, craters, and tectonic structures.
  34. 2013: At a World Trade Organization meeting, negotiators reach a trade agreement called the Bali Package; the agreement will lower global trade barriers and will simplify trade deals better to enable poorer states in Bali, Indonesia to sell their goods.
  35. 2014: Iran accuses U.S.-Iranian citizen and Jason Rezaian, the head of the Washington Bureau station in Tehran of unknown charges and holds him without bail. Since holding him, the mullahs have denied all requests from Switzerland to check on the wellbeing of the prisoner.  Meanwhile, the Obama administration releases six detainees from GITMO to Uruguay.  Since the UN considers them ‘refugees,’ the South American nation places no restrictions on their travel.

The Doors record label released another ‘best of’ compilation on September 18, 2001,” “The Very Best of the Doors.”  Once again, we find a fine selection of hits here for both the veteran and the novice listener.  This is perhaps one of the greatest bands to literally explode out of the mid-1960s and could have gone so far had not the lead singer overdosed on drugs while on hiatus in Paris.   We wholeheartedly recommend it and urge the readership to use the link we provide you here so you can visit Amazon.com.  Once there, pick it up in the format, the condition, and the price that works best for you- you will be glad you did.
