Shafter, CA, 09-23-2018 Sunday: ¡Buenos días, amigos míos, bienvenidos al mejor blog dirigido por profesionales del Servicio de alimentos en Internet! For my English-speaking friends, welcome to the blog, the best place we know of where those of us who labor in the world of professional food service have a voice. Even though mine almost went silent earlier in the week, I am sorry for any offense I may have offered anyone out there among the readership. I will do my best to refrain from allowing the intensity of the day to cause me to say hateful things as that is not the sort of person I am or how I wish to be. Again, my thanks go to Google.
I want to address something in my final post of the year (or so it appears) and that is my fear of the nation reverting to a time when inequality reigned supreme and segregation was the rule of the day.
Our country has a checkered history when it comes to relations regarding race and ethnicity, we began in a hole with indentured servitude and slavery. We fought a major war to end said slavery and then for another century, fought to provide civil rights to all Americans no matter their skin color, their nation of origin, or their religion, even their sexual preferences.
Black Americans, Native Americans, Hispanic Americans, Asian Americans and numerous other lesser-and-sub-groups fought to achieve equality with the mainstream. Jews, Muslims, Catholics, many groups found the apparatuses of government arrayed against them so they had to work long and they had to work hard and to rise to a higher level than the one from which, they sought equality.
Just when we thought we were on the precipice of equality, we found the goalposts being moved backwards in time, only this time, the segregation movement was against white people as black and Latino liberals and apparent self-hating white liberals sought to poison a generation or two with cries of “white privilege” and “racism” to cause them to go silent.
Like millions of you, I saw the election of Barack Obama in 2008 as an event the likes of which, the world had never seen. We finally got across the finish line with our first non-white president. Instead of working to heal the last lingering wounds of racism, he instead exacerbated them by inserting himself and his administration into every police shooting of a black victim.
We went from having hope for the future to dreading its onrushing freight train-like status of increased racism, reverse segregation, and strife between the races.
We hear liberal pundits on TV slamming white people for this and that offense. As a light-skinned Latino with blood dating back to the time of the conquistadors, the modern crop of indoctrinated “Animal Farm” George Orwell losers now seek to reimpose lines between the races out of some misguided attempt at ‘payback.’
Friends, no one lives today who ever owned slaves unless he or she immigrated here from a place where slavery still flourishes such as Africa, parts of Asia, the Middle East, and even Latin America so how can we exact ‘payback’ from those who have nothing to do with what happened to our ancestors.
Heck, many Latinos see me more as an oppressor because of my long Spanish bloodline than they do as a fellow Hispanic so I suffer from some of the blowback of the modern leftist, liberal era. This is not right and to speak about it takes guts but something must happen or we will lose our country.
I would urge liberal politicians and pundits to shut up about ‘white people this’ and ‘white people that.’ Shut up about ‘white privilege’ and all stop with the ‘old white people this’ and the ‘old white people that.’ You are not making things better scoring your cheap political shots, you are causing the nation irreparable damage.
We know the young people in college and at universities are damaged by the indoctrination they have experienced from day number one in grade school. We know the current generation going through grammar school are learning all sorts of false information about a vast variety of things, whether about race or sexual preference and all the attendant things accompanying those ideas.
We need now more than ever to pull our country together and to heal the divisions. Bashing President Trump every day for being ‘racist’ makes no sense to me as I have yet to see the proof. I never heard that Donald Trump was a ‘racist’ prior to him running for and winning the presidency. What he did was an amazing feat and I hope he continues keeping his promises.
Amigos, let us return to fighting over issues but do it with dignity and with class. Let us not go after one another based upon the flawed ‘science’ of ‘identity politics.’ If we continue doing this, we are going to damage the fabric of the nation as all the successful multi-racial-and-ethnic marriages and relationships with or without kids and grandkids will begin to rip apart. This is not right.
I hope someone out there is listening to me. Let’s work together instead of against one another. I will see you next time- Yo veré la próxima vez.

As have the rest of my colleagues, local Bakersfield street artist, Simone, created these portraits of me that you will see over successive days here at the blog. I guess Simone did ‘okay’ in capturing my likeness; I guess it could have been worse. I was a young cook back in the early 1960’s when I commenced my culinary career. I served underneath a Master Chef for many years before striking out on my own. I went up the coast of the Western United States and Canada, working all the way, until I made it to Alaska. From there, I moved to Hawaii for a couple of years (1994-1997) before I returned to Washington State and it was there that I met Stinkbug.
