Now, unlike many of my colleagues who openly deride her for being a simpleton and who have bestowed the derogatory name of the “Baby Evita” on her, I will refrain from that type of language as calling other people names- even if they are genuinely numskulled or lean towards communism- is not correct in my book. I want to elevate our conversations to a higher plane and will do my best to keep this promise to you: I will be as polite as I possibly can whenever discussing our fellow human beings.

While the Green New Deal might sound ‘ono,’ it would prove to be a big flipping mess…

Honolulu, HI, 02-25-2019 Monday:  Last September, I predicted that the Democrats were going to lose and lose big in the 2018 Mid-Term Elections as I was reading the same sources as my colleagues were, came to many of the same conclusions, and thought that once we went down in defeat, that perhaps solid, older, more patriotic Democrats would be able to wrest the party away from the kookier elements making us the laughing stock of the world.

I was wrong.  The Democrats did quite well, winning back the House of Representatives, which has led to divided government and renewed vigor in going after President Donald J. Trump and some of the crooked lolos he has around him.  At the same time, however, some of the people who won seats blow my mind.

I find myself holding my head in my hands and imbibing a bit more wine at the end of a long night whenever I see that pop-eyed little girl from New York, the one with the squeaky, high-pitched little girl voice, Alexandria Ocasio-Cortez.

Now, unlike many of my colleagues who openly deride her for being a simpleton and who have bestowed the derogatory name of the “Baby Evita” on her, I will refrain from that type of language as calling other people names- even if they are genuinely numskulled or lean towards communism- is not correct in my book.  I want to elevate our conversations to a higher plane and will do my best to keep this promise to you: I will be as polite as I possibly can whenever discussing our fellow human beings.

Some of the things this new generation of young firebrand leftist Democrats suggest sound somewhat goofy to me just as I am sure they do you.  I find it sad that in this time of better opportunities at attaining higher educations that so many have attended university and come away from them with little to nothing to show for their time there other than big student loan debt.

The BIG STORY of the day (other than Jussie Smollett and his failed attempt at causing racial rancor via creating a phony hate crime) is this incredibly juvenile “Green New Deal.”

I applaud my mainland colleagues, Chefs Brian and Charles, for devoting so much of their valuable time to printing both the Green Party’s version and the AOC version that she proudly put forth in the House and then had to yank down, scurry out with her tail between her legs, and go to ground, so bad was her plan.

My family and I own and operate a profitable business in the nation’s 50th state as well as are lifelong residents.  We put our blood, sweat, and tears, as well as every nickel we make, back into the business so we can scrape a living together for Lalo and me as well as have something to pass on to our kids.

I would think that AOC, having tended bar and most likely worked in professional food service would be aware enough to understand that the restaurant business is not one in which, owners and workers make Menehune-like temples and fish ponds of gold.  We barely get by because we can charge only so much over the costs of food, labor, energy, and various sundries that allow us to give the customers high-quality for low value.

Restaurants open and close with a frequency that is disturbing to see.  Many people believe that if they can open a restaurant, they can make it successful, reap in the bucks, and maybe if lucky, build a franchise that will exist in all 50 states.  It is simply not like that and I would have hoped that Congresswoman Ocasio-Cortez would have understood this before dreaming up a plan that will cripple my industry and many others like it.

There are ways to work to save the environment and Hawaii has blazed the trail in this regard.  We exist in a fragile ecosystem, one in which, the east side of the principal islands are covered in rainforests while the western sides are covered in desert.  While I am not saying that the western ends are like Death Valley, what I am saying is that vegetation is not as thick and abundant as it is on the eastern sides nor the rainfall.

If you visit neighboring Maui and climb up Haleakala, one sees a variety of vegetation that transforms from tropical to what one might find in the Sierras or in any other mainland mountain range.  Pines, eucalyptus, all manner of trees.  We work hard at maintaining our land, sea, and air environments and have done a spectacular job of it.

Unfortunately, to force a plan like the Green New Deal on the people of Hawaii would raise the cost of everything which already is higher than any place else on the mainland with the exception of Alaska.  The cost of transport, the cost of storage, all of this makes food very expensive.

Energy prices, too, are exorbitant because we must bring our fuel from the mainland.  Most of our electricity comes from oil, brought over on massive tankers to our power plants and, dare I say it, we also burn coal (although we are phasing those plants out).  This is not to say that we do not have wind, solar, geothermal, and biomass (algae) as we do but as long as those sources produce miniscule amounts and cost more, oil is going to continue to be our major source of energy.

I lament the fact that Congresswoman Ocasio-Cortez’s mind is not where her heart is.  There is no re-transforming the state’s power generation exclusively to wind, solar, geothermal, and biomass in twenty years, much less ten.  We are working on it via a Clean Power Initiative that we hope is going to enable us to become more self-sufficient but there is no way my state will ever come close to what the Green New Deal proposes.

Alas, if you want to know why I hold my head in my hands and drink more Maui wine, it does not take a genius to see that good-hearted, younger Democrats, people who have come up being taught fables and fairy tales in public schools and universities, as well have taken overdoses of Captain Planet and other claptrap ‘environmental defenders,’ or have bought Al Gore’s ‘nonfiction movie’ with abandon have no clue as to what the REAL world is like.  These people will destroy our party and cost us big.

That said, I began my career in the early 1970’s when I apprenticed to cook under one of the masters on the Big Island where I was born.  I moved to Oahu in the early 1980’s after having worked in both Kona and Hilo, HI, and have been there for most of my professional career. 

Moreover, I have also worked on Maui for a few years (1995-1998) and have been on Kauai (2001-2003) before returning to Honolulu.  My goal is to prepare the next generation of chefs for the future and to help the underprivileged in their struggle to attain careers in the foodservice industry.

If PG&E should go bankrupt, an already untenable power situation could become impossible…

Taft, CA, 01-17-2019 Thursday:  Friends, I live in Taft, California, on the west side of Kern County.  My ‘city’ is an old one, been here a long, long time and has seen better times as well as worse.  We make money off the oil industry, we have several of the largest and oldest oil-producing fields here in California surrounding our town, most of our work force works in oil production or in support of said production.  For us, it is a way of life and has been, one we hope to continue but given the current management in Sacramento, I am sure we will find ourselves under increasing amounts of pressure to surrender oil and natural gas production and to begin plastering windmills and solar farms all around the hills and fields surrounding our ‘metropolis.’

While there is nothing wrong with windmills and solar, they will never generate the necessary power for a growing society, by growing, I mean, all around the central valley and the west side of the county, Bakersfield being the largest city, but there are also other growing locales surrounding the county seat, chief among them being Shafter, Wasco, Delano, and even McFarland.

The environmentalists control state government and in many places, they also control local government and they always strive to limit the amount of fossil fuels we can use, thereby driving up the costs of energy for everyone as the more we must incorporate clean renewable energy (uh, huh), the higher our bills go.

In 2013, Pacific Gas & Electric (PG&E) closed the San Onofre Nuclear Generating Station (SONGS) south of the beautiful coastal city of San Clemente, California.  In so doing, the cost of energy skyrocketed.  The people were not happy but the environmentalists sure as heck were, which is sad.  Nuclear is safe.

In 2020-2022, or around that future timeline, PG&E is going to close our second and last nuclear power plant, the Diablo Canyon Power Plant over in San Luis Obispo, California.  That plant has been a godsend at keeping power costs lower and when it goes down and more wind and solar take over supplying California’s needs, the costs of heating and cooling one’s home and/or business are going to go up, higher than most people will be able to afford.

I suppose with PG&E now seeking bankruptcy protection- again, I should say- over the recent disaster of fires in Northern California, particularly in the once lovely town of Paradise, costs will continue skyrocketing as there is no telling if the utility will be broken up, if parts will be sold off, and who might be in charge of the company when all is said and done- perhaps a Chinese company?  Good Lord!

Sadly, what happened in Paradise last year is not the only disaster faced by the utility.  Back on September 9, 2010, there was the infamous natural gas explosion in San Bruno, California, a suburb of San Francisco.

The gas lines there were among the oldest in the state and when they ruptured and caught fire, the resulting blast and accompanying fires destroyed more than 100 homes, killed at least 8 or more people and sent another 50-60 to the hospital for treatment.

The resulting lawsuits hammered the statewide California power utility, causing them to spend billions to upgrade existing gas and electric lines but never as fast as needed.  What happened in Paradise once again occurred because the equipment was old, the workers overworked, and the state’s policies regarding clearing the forests of dead and diseased trees and heavy underbrush create the conditions necessary to have a firestorm.

The environmentalists and the Democrat politicians always try to repel any criticisms leveled against them by passing them off onto PG&E or the Trump administration.  However, neither of the fingered entities are responsible for disastrous environmental policies that are only to continue becoming worse as Gavin Newsom gets his greasy little hands into everything.

California is rapidly becoming an unlivable state for many people due to ever-growing cost of living.  Food prices continue going up thanks to additional environmental restrictions on semi-trucks, laws restricting how much engines can idle in traffic, increasing fees and costs associated with operating vehicles of all types, and some of the highest fuel taxes in the nation, taxes that soon will be around $1.00-1.15 per gallon.

In 2016, the voters had an opportunity via a ballot measure to get rid of the fuel tax but because the wording was so mixed up on the ballot, the measure passed instead of ending the unfair tax.   We can thank our ‘illustrious’ state Attorney-General Xavier Becerra for all the confusion.  Thanks, Xavier, you and Jerry Brown deserved to win the First Annual Lavrentiy Beria Award.

We continue hoping we will arrive at the point of no return, the time in which, voters across the state, in all classes of people, poor, middle class, wealthy, of various skin colors and ethnicities will rise up and smite the Democrats destroying our state.

Tragically, it is difficult because the Democrats, the media, and the environmentalists stand united against the rest of us.  With their offer of free health care and whatever else they plan to expend on illegal aliens instead of on the voters, they hope to buy enough support from those who owe everything they have to Democrat largesse.

Are conditions rife for a French Revolution-style overthrow of the state government, via peaceful means at the ballot box?  Could be.  But like the downtrodden people of France who rose up against the nobility and the clergy, so, too, will we rise up against the Democrats as personified by Gavin Newsom and his Democrats and the environmentalists who seemingly control everything.

Although some record companies and music critics might have remained skeptics about the staying power of Queen, their fourth album blew them over the top and into deep space.  “A Night at the Opera,” released on November 21, 1975, contained their magnus opus, “Bohemian Rhapsody,” a near six-minute song that much like the Beach Boys amazing classic, “Good Vibrations,” managed to move through numerous distinctive styles and signatures to the point that radio stations playing it in its entirety were astonished at the positive reception the album garnered making the band an even bigger live draw than ever.  From this point forward, the band became superstars and would be such.  Please, seek the album out at your favorite haunt for the best rock-and-roll music as you must add it to your collection.

Although some record companies and music critics might have remained skeptics about the staying power of Queen, their fourth album blew them over the top and into deep space.  “A Night at the Opera,” released on November 21, 1975, contained their magnus opus, “Bohemian Rhapsody,” a near six-minute song that much like the Beach Boys amazing classic, “Good Vibrations,” managed to move through numerous distinctive styles and signatures to the point that radio stations playing it in its entirety were astonished at the positive reception the album garnered making the band an even bigger live draw than ever.  From this point forward, the band became superstars and would be such.  Please, seek the album out at your favorite haunt for the best rock-and-roll music as you must add it to your collection.

HOT TUNA released its second album, the electrified live effort, “First Pull Up, then Pull Down,” on May 12, 1970.  The band was now a bit bigger than before featuring Jorma Kaukonen (guitars/vocals), Jack Casady (bass), Joey Covington (drums), and Papa John Creach (electric fiddle).  This album is a smoking hot, electrified rock effort that ignites from the fiddle of the first tune, “John’s Other” to the final chords “Come Back Baby,” an effort that would set this band on the path to becoming a complete separate act from the original parent group, the Jefferson Airplane.  We hope you will see this album out at whatever store you visit for rock and roll music as this is definitely a must-own effort from a bygone era.  We love it as will you.

Rocker Ronnie Wood of the Faces released his first solo effort, the acclaimed “I’ve Got Me Own Album to Do” on September 13, 1974.  With help from loads of friends, he delivered a slam-dunk effort from which, he would maintain a lengthy solo career as he played in the remnants of the Faces and then with the Rolling Stones with whom, he has been second guitarist to Keith Richards since 1975.  This album is a smoking hot one featuring a wide range of musical inspirations and with help from a wide swath of British and American musicians.  We love it and know that you will, too, which is why we encourage everyone to seek it out wherever they buy their classic rock music.  You will enjoy it.
